Cesare, how would you describe your cooking style?
In my contemporary Italian cooking style, I let myself be inspired by colours, seasons, moods and memories.
What's your favourite dish to make?
I mainly enjoy preparing meat dishes. It feels like ancestral cooking, I love the scents of the fire.
What is your favourite ingredient to work with?
My favourite ingredients to work with are spontaneous herbs, because they are the most sincere expression of the territory.
I let myself be inspired by colours, seasons, moods and memories.

Who is one of your top suppliers or producers?
My top supplier is Gianvittorio Porasso, an incredible goat herder. I appreciate him for his deep relationship with nature.
What is the biggest challenge you’ve faced in your culinary career?
In my industry, every day is a challenge.
If you could only eat one dish for the rest of your life, what would that be?
Filindeu in sheep broth.
What’s one thing in the area that your guests absolutely need to see or do?
I would recommend guests to taste the iconic “bicerin”, a traditional hot drink native to Turin, in Piazza della Consolata and walk the historical-artistic routes of Turin.
