Francesco Sposito is owner and chef at restaurant Taverna Estia. After receiving his culinary education from top chefs Igles Corelli, Alain Passard and Barbaglini, Francesco returned to Estia and took over the family restaurant. His cuisine was awarded its first Michelin star in 2007, and a second one followed in 2015. At Taverna Estia, Francesco splendidly showcases his exciting Italian delights. His creative regional cuisine attracts visitors from near and far. Keeping sustainability in mind, he prepares refined, elegant, and complex contemporary Italian dishes. We asked the chef some questions about his culinary inspiration, his favourite dish, and much more.
What's your favourite dish to make?
I enjoy making squid tagliatelle with lemon. It’s a traditional dish in my kitchen. Finding the right balance between the sweetness of the squid and the acidity of the lemon is always fascinating.
I would describe my cooking style as creative regional Italian cuisine.

What is your favourite ingredient to work with?
When working with curly Papaccella or Brusciano (Neapolitan peppers), I can extract wonderful aromas and flavours.
Who is one of your top suppliers or producers?
One of my top suppliers is Vincenzo Egizio. The countryside of Brusciano is being redeemed by his agricultural recovery of neglected products.
Which gastronomic trend are you excited about the most?
I’m excited to see the return to the territoriality of the product and traditional flavours.
If you could only eat one dish for the rest of your life, what would that be?
Tuna “in carrozza”, an old favourite of mine that brings me back to street food.
What’s one thing in the area that your guests absolutely need to see or do?
I would recommend visiting Vesuvius' crater on Mount Vesuvius.
