Interview with Luigi Pomata

Luigi Pomata is owner and chef of restaurant Luigi Pomata. After gaining culinary experiences in kitchens across Italy and the world, Luigi returned to his hometown in Sardinia and devoted himself to his family’s restaurant in Carloforte. His cuisine is a blend of traditional local Italian cuisine and innovative ideas. As the third generation to run this renovated gourmet establishment, chef Luigi excellently showcases his kitchen, blending Ligurian, Sardinian, and Arabic traditions. We asked the chef some questions to get to know him better, about his culinary inspiration, his favourite ingredient, and much more.

Luigi, how would you describe your cooking style?

Mine is a contemporary cuisine that looks to the future without ever forgetting its origins, while enhancing local products.

What's your favourite dish to make?

My signature dish is fish in general because it lends itself to many preparations and infinite variations.

I am considered the master chef of red tuna.

What is your favourite ingredient to work with?

I am considered the master chef of red tuna. To some extent, this is true, as this main ingredient is a tradition in my country.

Who is one of your top suppliers or producers?

I work with local markets, small fishing companies and small farmers. I live on an island rich in resources that allows me to use the products of the sea, the countryside, and the mountains, without having to import them from other areas of Italy.

What is the biggest challenge you’ve faced in your culinary career?

My biggest challenge was deciding to return to Sardinia after having had work experiences around the world. Growing a small business by educating the customer and building a relationship of esteem and trust.

Which gastronomic trend are you excited about the most?

I enjoy contemporary and experimental cuisine that creates new combinations and contrasts by reworking classic techniques.

If you could only eat one dish for the rest of your life, what would that be?

Pizza.

What’s one thing in the area that your guests absolutely need to see or do?

I would recommend guests to visit the civic market of the city of Cagliari. It’s one of the largest in Europe, unmissable.
