Michael Philipp is owner and chef at restaurant Philipp. Michael has been running his restaurant, together with his partner, sommelier Heike Philipp, in the heart of the Franconian wine-growing region near Würzburg since 1999. Chef Michael Philipp is among Mainfranken's most innovative and technically proficient chefs. His cooking is influenced by classical French cuisine, which he mixes with a local touch. It’s no surprise his cuisine was awarded a coveted Michelin star. We asked Michael a couple of questions about his cooking style, his love for fish, and his top suppliers.
Michael, how would you describe your cooking style?
My cooking style is inspired by classic French cuisine with artisanal, contemporary preparation. For the creative dishes in my seasonal kitchen, I only use fresh, seasonal products.
What is your favourite dish to make?
Fish and Mediterranean pasta dishes are my greatest passions because I can express my creativity best in these dishes.
What is your favourite ingredient to work with?
I prefer to work with raw fish and shellfish, which is the best way to showcase the quality of my products.

Who is one of your top suppliers or producers?
My top supplier is Kochstoff. Grischa Euler has been supplying me with the best products from the Parisian Rungis market. I have also gotten top-quality items from small fishermen directly from England since the beginning of my cooking career.
What is the biggest challenge you’ve faced in your culinary career?
For years, our biggest challenge has been balancing work, family, and personal development.
Which gastronomic trend are you excited about the most?
We look forward to developing our concept of gastronomy, taking international trends and our specific circumstances into account, and bringing it to life for ourselves.
If you could only eat one dish for the rest of your life, what would that be?
A perfect, classic Wiener schnitzel.
What's one thing in the area that guests have to see or do?
I would recommend visiting the Gate Tower Theater in Sommerhausen, it is the smallest theater in Germany. You can also take a bicycle tour through vineyards, stroll along the river Main, and visit winegrowers. In Würzburg you can visit the Residenz (UNESCO World Heritage) with the largest ceiling fresco in the world by Giovanni Battista Tiepolo.
