Sommelier Franziska Ilg and chef Patrick Germann in Schwarzenburg operate under the motto: "We serve culinary delights." Guests can get in the mood with exciting amuses: a potato soufflé with beetroot and sprouts salad, and a homemade terrine with hazelnut cream cheese and beetroot macarons. Then there’s the ‘MundArt’ menu with five courses, which include a variety of exceptional dishes. For example, the foamed parsley root cream soup with dried meat and beetroot chips and organic sea bass from France with risotto, palm kale, and tonka bean sauce. The carefully compiled wine list by sommelier Franziska Ilg complements each dish, to finish this culinary experience in splendor.
