Our mission is to preserve and develop culinary heritage, supporting small businesses and showcasing our country’s traditions and richness through sustainable and quality ingredients. So Ferments, Cosmos’s specialized fermentation lab. Using Koji, tempeh, and lactobacillus, we craft unique and healthful products using Bulgarian ingredients. Handcrafted with traditional techniques, our ferments enhance dishes with deep and complex flavors, providing an unforgettable dining experience.
