Simon Petutschnig was born in Austria and arrived in Spain in 2005 after intense practical training in his country, where he was taught the craft from the basis of classical French cuisine. In Spain, he has worked with great names in gastronomy: Paco Pérez, Jordi Vilà and Sergi Arola, for whom he was chef de partie. Simon's cuisine is defined as "Mediterranean-Asian without borders", inspired by the Japanese flavours he loves so much, and from which he has learned so much, and prepared with the local seasonal products that Mallorca is so proud of. He is a master of his craft and combines the flavours in his dishes beautifully.
