Franz Berlin is chef at restaurant Berlins Krone. Born to master chef Rolf Berlin and hotel manager Gudrun Berlin, it's no wonder that he developed such a strong passion for cooking. After his culinary training at Bad Hotel Bad Teinach under chef Thomas Klink, Franz continued to learn at Michelin-starred restaurants across Germany. He now runs the kitchen at his family’s hotel restaurant Berlins KroneLamm and has been given many awards for his outstanding cuisine. Using only the best regional ingredients, chef Franz Berlin and his kitchen team deliver surprising delights for the palate. We asked the chef some questions about his culinary inspiration, favourite ingredients, and much more.
Franz, how would you describe your cooking style?
My cooking style is classical, but influenced by modern influences and regional ties.
What's your favourite dish to make?
Sauces are my passion. The love and time it takes to get the best out of them reveal the essence of cooking. They function as a link; they connect every flavour in a dish.
I love working with Piment d'Espelette (French pepper). It always gives the recipes the final touch without drawing too much attention to itself.

Who is one of your top suppliers or producers?
My top supplier is JRE-Origins. They all work with the same passion as all of us JRE members and always focus on the product.
What is the biggest challenge you’ve faced in your culinary career?
The greatest challenge is and was the game between me and my employees. To inspire them again and again, to carry them away, to challenge and to encourage them, because they deliver the most energy! The performance on the plate or with the entire menu is always the qualitative result of the entire team.
Which gastronomic trend are you excited about the most?
I'm not a trend person, but it's exciting to see what's new. It's not uncommon for us to adopt something new, but we much rather create our own trend, so to speak.
If you could only eat one dish for the rest of your life, what would that be?
I would choose my grandmother’s signature beef rolls with melted Spaetzle (German pasta), carrot, and other vegetables.
What’s one thing in the area that your guests absolutely need to see or do?
We are located in the Northern Black Forest! That alone is worth the trip in my opinion.
