Matthias Höfflin – Wine visionary with a spirit of research
Markus Höfflin founded his winery in 1987 at the young age of 20, with the intention of breaking new ground and producing original wines. Shaped by the example of his parents, pioneers of organic viticulture and Bioland members from the very beginning, the idea of sustainability has always been his guiding star. Höfflin relies on traditional craftsmanship, which he has developed and perfected over the past few years with an irrepressible thirst for research. The inner qualities of his wines can be made visible through crystal images. They show remarkable order and beauty. Excerpts from it are shown on the labels.
Schambachtal’s natural paradise at the Kaiserstuhl
Located on the sun-drenched slope of the Kaiserstuhl, 15 kilometres south of Freiburg, lies a hidden idyll hidden in the middle of the Rhine plain. The Schambachtal is one of the few valleys without through traffic. Six of the 36 bird species found here are listed as endangered. In addition to its up to 30-meter high loess layers, the fertile, fiery soil of the Schambachtal provides ideal growing conditions for wine. As a result of a return to essentials, lively wines thrive on the 14 hectares of property.
The WeinWerkstatt practical research: forward to the origin
The focus at WeinWerkstatt is on producing low-sulfur natural wine - pure craftsmanship, unique every year. They are based on the natural substance which gives the berries their shelf life. After 30 years of experience and critical observation of fermentation and maturing processes, Höfflin knows that lifting these substances is all about having a fine feel for the dose. The entire winemaking process, including maceration, maceration, and yeast maturation, is monitored by sensors until bottling. “For me, this is the traditional way of making wine, the original. "Our wine is profound, long-lasting, dense, wild, and powerful," explains Matthias Höfflin.
