In a maze of narrow streets in the heart of the Sasso Caveoso, Via Pennino stands out for its artistic and architectural charm. The ancient and prestigious Palazzo Torraca is a building that was owned by the Ulmo family, one of the city's most famous and wealthiest aristocratic families in the 18th century, and is now home to Dimora Ulmo restaurant. The furnishings are a key part of the concept of this extraordinary restaurant with contemporary art hanging on the walls that perfectly complement the original features of this historic palazzo. The generous and unique wine cellar takes diners on a journey around the world and the creations of the chefs honour the local tradition with their careful interpretation of Italian cuisine.

The cuisine at Dimora Ulmo uses ingredients that are predominantly sourced from the local landscape and combines them with other more exotic ingredients to create exciting dishes. The dishes are inspired by traditional Italian cuisine but given a careful twist that enhances but does not completely change the dish. The restaurant offers a three-course tasting menu that takes guests on a journey that brings them closer to their cooking philosophy and showcases what the chefs have learnt while working with respected chefs of different nationalities.
