Pelegrini’s cuisine

Restaurant Pelegrini offers a tasting menu as well as a 4-course dinner menu. The menu varies per season and chef Rudolf Štefan works with seasonal local ingredients and small producers from the region. Constantly striving for improvement, Rudolf and his kitchen team develop new dishes each winter: every year they create nine new dishes for the following season. On the Pelegrini menu, you can find local dishes such as mussels, oysters, sea snails, sea urchins, and various types of fish. Next to Adriatic delicacies, you can also opt for meat-based dishes with lamb and veal, or one of Rudolf’s re-interpreted bestsellers: the traditional bruschetta, the beef cheeks, or the monkfish tripe.

Šibenik area

Right in the city heart of Šibenik, you’ll find Pelegrini. Much like its gastronomic heritage, the city itself dates back to the Roman period and has been influenced by the Venetians, the Ottoman Empire, and the French for centuries. So you can imagine there’s plenty to marvel at.  The restaurant itself is located inside a 700-year-old building, Villa Pelegrini-Tambača, alongside the Šibenik Cathedral (Cathedral of St. James) which is an impressive landmark and a UNESCO monument. From here, the Croatian coast is within convenient reach.
