Nine years ago, Pasquale Carfora embarked on a culinary journey from the picturesque town of Sabaudia in southern Italy, just south of Rome, to the Netherlands. While initially pursuing a civil engineering degree, his heart was always in the kitchen. His culinary adventure started with an internship at the prestigious La Pergola*** in Rome and evolved through his work at Antica Osteria Nonna Rosa in Vico Equense, a charming coastal town near his hometown. From a young age, he absorbed the wisdom of food preparation in rural settings, where everything came fresh from the land, and the ethos was ‘we eat what we produce’, a philosophy passed down by his grandfather.

Cuisine and Cooking Style

Pasquale Carfora presents a contemporary twist on Italian cuisine, blending modernity with traditional Italian flavors. The foundation lies in the time-honored Italian culinary principles, featuring Italian ingredients alongside locally-sourced produce. Carfora honors the roots of Italian cooking, characterized by resourcefulness and quality. Aroma meticulously selects ingredients, emphasizing those that retain their excellence even after long journeys, such as olive oil, Parmigiano Reggiano, balsamic vinegar, and wine. Local meat producers are also championed. A must-try signature dish at Aroma is Pasquale's Emst trout, harmoniously paired with pasta cacio e pepe, elevated by honey from Italy, enhanced by its unique regional character.

Accommodations

For those seeking an extended experience, Aroma offers dining and lodging packages in collaboration with B&B Mollenvlied in Vaassen and the boutique hotel Zenzez in Apeldoorn. Both venues offer intimate and comfortable stays. Mollenvlied, inspired by a sheepfold, presents five well-appointed rooms with private bathrooms, some with private terraces. Zenzez, housed in a Jugendstil villa, boasts stylish, romantic suites, luxurious rooms, and family-friendly accommodations. Conveniently situated within walking distance of Apeldoorn's city center and the Orpheus Theater.

Special Activities

Beyond its culinary excellence, Aroma extends its offerings to private dining, corporate gatherings, weddings, and catering services. The restaurant is also crafting a cookbook featuring over 50 recipes, providing insight into Pasquale's culinary vision, ranging from home-cook-friendly creations to signature dishes for dedicated food enthusiasts. Additionally, Aroma is developing a product line, including sugo ragù, olive-based sauces, apricot preserves, and the unique 'Uva Fragola' grape with a strawberry essence, primarily sourced from the Agro Pontino region.

Vaassen, nestled on the eastern fringes of the Veluwe, offers an idyllic backdrop for relaxation. Guests can complement their Aroma dining experience with visits to nearby attractions, including Paleis Het Loo, the Apenheul, Park Berg en Bos, and the Kröller-Müller Museum in the National Park De Hoge Veluwe. Pasquale's affinity for the area is not just due to its natural beauty but also its exceptional local produce. Like Agro Pontino, his ancestral region, this locale boasts numerous organic farms, serving as the source for Aroma's meats. The region's bountiful wild herbs make it an ideal destination for culinary exploration.

As a new restaurant, we are on the right path. We aim to remain the best Italian restaurant in the Netherlands. When guests from places like Rotterdam, Groningen, Friesland, Maastricht and beyond our borders come to dine here, it brings recognition. And when our guests, the service team, and the kitchen staff are happy, it's a good day. That's when I've achieved my goal.
