Jermain de Rozario is owner and chef at restaurant De Rozario. Jermain de Rozario began his career in hospitality as a waiter at restaurant De Warande in Helmond. In 2016 Jermain and his partner Virginia got the chance to take over the restaurant where Jermain once started as an apprentice. They opened their very own restaurant De Rozario. Here, Jermain brings his own style to creative cuisine that focuses on Asian delicacies. We asked the chef some questions to get to know him better, about his culinary inspiration, his favourite ingredient, and much more.
Jermain, how would you describe your cooking style?
I would describe my cooking style as being connected to nature. With the present, the past and the future. Frequency and energy. Like the chakras. With an Asian overtone and a special emphasis on vegetables.
What's your favourite dish to make?
I don't have a favourite dish. Every dish is a challenge to make because our dishes always contain different layers.
What is your favourite ingredient to work with?
Norway lobster. Because the langoustine has its own taste, it is super delicate. It’s always a challenge to let the Norway lobster predominate and give it a stage. A challenge, because the langoustine is already perfect as it is.
I would describe my cooking style as being connected to nature.
Who is one of your top suppliers or producers?
All our suppliers are equally important. For candles, wine and fish. They all contribute to the experience in our restaurant and they all have beautiful products, otherwise we would not opt for a collaboration.
What is the biggest challenge you’ve faced in your culinary career?
My biggest challenge was finding and keeping the balance between private life and work.
Which gastronomic trend are you excited about the most?
Just be yourself.
If you could only eat one dish for the rest of your life, what would that be?
My mother's soto soup.
What’s one thing in the area that your guests absolutely need to see or do?
Helmond has a castle right in the center. I really recommend you take a look.
