An owner-chef with a passion for contemporary French cuisine
Chef Allan Castellote studied philosophy and law but, inspired by his roots, quickly turned to his (grand)mother’s French-Spanish cuisine that had amazed him since he was a kid. After graduating from the Ecole du Cordon Bleu in Paris, Allan worked with legendary Michelin-starred chefs such as Yanick Alléno, Philippe Mille, Christophe Moisand, and Alain Dutournier. He also cooked in renowned multi-Michelin-starred restaurants such as hotel restaurant Le Meurice (Paris), the Domaine Les Crayères (Reims), and the Carré des Feuillants (Paris). After these culinary highlights, chef Allan moved back to his hometown. Here, he opened restaurant Le Senso in 2013, together with his brother. Honouring France’s rich culinary tradition, chef Allan sometimes also draws his inspiration from foreign classics. The result: local flavours with a contemporary twist.
