Chef Filip began at the Hotelschool in Leuven and has been working his way up in the world of gastronomy for over two decades. In 1993, he founded restaurant Fidalgo together with his spouse: host and sommelier Christel Steenwegen. In Portuguese, “fidalgo” stands for a member of the nobility, with or without a title. Likewise, Filip doesn’t wait around for awards but instead focuses on keeping his cuisine as honest, authentic, and innovative as possible. For this chef, routines are simply deadly. While chef Filip Dewijnants shows a playful approach to products, he always does so respectfully and while staying true to his principles. In the intimate setting of his restaurant, each dish is extremely well-thought-out and reflects the chef’s talent. Filip cooks according to his mood, which results in dishes that are just as creative and spontaneous as he is.
