A talented chef who serves modern Dutch cuisine with a stunning view of the Westerschelde river
When chef Laurent Smallegange was a child, he spent a great deal of time in the kitchen of his parents’ restaurant. His passion for cooking started at the chef's workbench, where he would be helping out making ice creams or cutting herbs. Chef Laurent enrolled in the Belgian hotel school Ter Groene Poorte to begin his culinary studies. When he completed his education, he was 18 years old. To attain the best culinary experience possible, he decided to work in the world's top restaurants. As a result, chef Laurent Smallegange was only 22 years old when he took over restaurant Spetters in 2011. Even at this young age, he developed his own culinary signature, focused on quality, detail, presentation, texture, and taste balance. Laurent knows that it takes a good team to reach a certain level of success. He believes that only together, you come up with great ideas and you can reach the top. He is right, because in 2013 the Spetters team was awarded a Michelin star. Then in 2015, Gault Millau declares chef Laurent 'Promise of the Year', and in 2017, restaurant Spetters wins the international JRE Heritage Award.
