Chef Martin Dumas trained with some of the industry's top chefs and built up an impressive resume before opening his own gourmet bistro Martin Comptoir. Martin gained experience with Francis Teyssandier, owner of the famous Chez Francis in Brive, and with the no less famous Gilles Dudognon at the Chapelle Saint-Martin restaurant in Nieul.

The restaurant is situated in the Halles Centrales district of Limoges and has an atmosphere reminiscent of that of the late Joël Robuchon and his legendary Atelier restaurant. Since Martin has been a part of the brigade of this three-star restaurant for a long time, this is not very surprising.
