Chef Olivier Hiernard began his culinary apprenticeship in Paris, at a traditional French restaurant. After this followed a journey of improvement that took him to Switzerland, Lausanne, Verbier, Zermatt, and later to Ireland and Spain. Having gained much experience in kitchens all across Europe, Olivier eventually returned to the Jura. Here, he joined chef Georges Wenger and worked at his restaurant for four years, learning from the very best. In 2012 it was finally time for Olivier to set up his own restaurant: De la Croix d'Or. His wife Claudia Hiernard joined him and fills the role of hostess and sommelier.
