At the tender age of three, he would peek into his father's pots and pans, and by the time he turned 12, he was already applying for an apprenticeship in the culinary arts. His official culinary journey commenced at the age of 15 with his training at Hotel Königshof in Munich. Simon had the privilege of learning from some of the greatest chefs in the industry, exclusively in MICHELIN-starred kitchens. His most recent mentor was Andreas Caminada at Schloss Schauenstein in Fürstenau, where he honed his skills under the guidance of the three-star master.
