Tim Extra

While he was still a student, top chef Tim Extra saved his money to go out to eat at a Michelin-starred restaurant. His choice fell on restaurant Apicius. During his dinner there he told his colleague he would like to become the head chef here one day. And so he did. After his culinary journey brought him to various restaurants in Austria, Germany, and Switzerland, he finally found his way back to Apicius. The restaurant was closed after the death of former owner Helmut Bittlingmaier, and no reopening was planned. A completely new, more modern kitchen style was introduced by Tim, with a young team and ideas from around the world, and Apicius was reopened.

Restaurant Apicius is known as one of the region’s culinary highlights. Situated in the German town Bad Zwischenahn, Apicius boasts a cozy, upscale interior. A superb wine list complements the restaurant's classically rooted, well-balanced cuisine. The restaurant uses some of its own produce from its garden, together with regional ingredients. Known for his passion for traveling, chef Tim Extra's creations often show an Asian influence but are always grounded in his home base. Diners who wish to extend their stay can spend the night at the luxurious hotel Jagdhaus Eiden am See and relax at the incredible spa.
